The time-tested way to use up some zucchini is to make bread. There are a million and one recipes out there, but I thought I'd share a family heirloom. My Great-aunt Kay made wonderful bread, and even brought some when my grandmother (her sister) passed a few years back. Even though Aunt Kay was well into the her nineties, she still made a few loaves for my Mom and us kids. I was touched and it was delicious, so I asked if she would share it with me. She kindly sent me a handwritten copy in the mail a few weeks later. She is gone now, too, but I like to think a little of her lives on whenever I bake it. Last night, I thought a sweet treat would be nice, so I dug it out of my recipe box. Her recipe called for walnuts or raisins, which I didn't have, but Dan thinks chocolate chips are a good replacement for either, so I made a little substitution. Still wonderful! If you'd like to try it, I give it to you just as she wrote it, with any of my own additions or comments in parentheses.
Aunt Kay's Zucchini Bread
(Makes 2 loaves)
1 cup walnuts and/or raisins (or chocolate chips!)
4 eggs
2 cups sugar
1 cup vegetable oil
3 1/2 cups unsifted flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
3/4 teaspoon baking powder
2 cups grated zucchini, not peeled
1 teaspoon vanilla
(Preheat oven to 350 degrees.) Chop walnuts. Beat eggs; gradually beat in sugar, then the oil. Combine the dry ingredients. Add to first mixture alternately with zucchini. Stir in raisins and walnuts,(or chips) and vanilla.
Turn into two greased and floured 9" x 5" loaf pans. Bake on lowest rack at 350 for 55 minutes or until loaves test done (toothpick comes out clean when inserted into the top). Let stand 10 minutes, then turn onto wire rack to cool. Bread will freeze.
