Aunt Kay's Zucchini Bread
(Makes 2 loaves)
1 cup walnuts and/or raisins (or chocolate chips!)
4 eggs
2 cups sugar
1 cup vegetable oil
3 1/2 cups unsifted flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
3/4 teaspoon baking powder
2 cups grated zucchini, not peeled
1 teaspoon vanilla
(Preheat oven to 350 degrees.) Chop walnuts. Beat eggs; gradually beat in sugar, then the oil. Combine the dry ingredients. Add to first mixture alternately with zucchini. Stir in raisins and walnuts,(or chips) and vanilla.
Turn into two greased and floured 9" x 5" loaf pans. Bake on lowest rack at 350 for 55 minutes or until loaves test done (toothpick comes out clean when inserted into the top). Let stand 10 minutes, then turn onto wire rack to cool. Bread will freeze.
